Protein-Packed Vegan Ranch Dressing

One day, while assembling an impromptu salad, I reach for the jar of vegenaise for a basic ranch dressing. Unfortunately, the jar had been returned to the fridge with only a tablespoon of mayo left. Curses, too late to turn back. Switching to plan-B, I grabbed a block of tofu and got busy.

This is perfect if you’re trying to cut oil out of your diet. Plus, you can smother the crap out of your salad, sandwich, or dipping snacks and not feel an ounce of guilt. After all you’re eating pure, unadulterated plant-protein. Grab a spoon if you want, I won’t tell.

Protein-Packed Vegan Ranch Dressing (makes about 1 1/2 cups)

Ingredients
1/2 block tofu, 7 ounces
1/2 cup non-dairy milk
2 tbsp apple cider vinegar
2 tbsp nutritional yeast
1 tbsp garlic powder
1 tbsp italian seasoning
2 tsp lemon juice
1 tsp salt
1 tsp black pepper
1/2 tsp dried dill
1/4 tsp onion powder
2 tbsp oil (opt)

Put all ingredients, except oil into a blender. Process on high for about a minute, or until tofu is completely smooth. If using oil, add while blending on low to emulsify. Season to taste.
