Baked Farmhouse Courgettes

Another traditional Irish recipe, Monkey Man and I usually eat these around Saint Patrick’s Day. It’s a delightfully easy way to enjoy summer squash with practically zero effort and 100 percent satisfaction. They are also good as party food, as they are easy to grab and bite without any mess.

Baked Farmhouse Courgettes  

Ingredients 
Courgettes (Zucchini), halved lengthwise
Vegan Butter
Nutritional Yeast
Daiya (or other vegan) Cheddar Cheese 
Salt and Pepper
Garlic Powder

Place courgettes in a glass baking dish and sprinkle on a thin line of nutritional yeast. I did this to pump up the  nutritional content a little and add a sharper flavor to the vegan cheese. Sprinkle with the cheese and add a few little dots or pats of vegan butter and place under the broiler. Top with a little bit of salt, pepper, and garlic powder.

Cook until cheese starts to bubble and turn golden and they look tender (about 15-20 minutes). You can eat it as a side dish or serve it on top of buttered toast.
